The Company

Our client - a reputable & leading 5 stars international hotel is looking to identify an Executive Chef for their luxury hotel in Japan.

The Role

The Executive Chefis responsible for all culinary activities for the restaurant. Thispositionwill oversee all activity in the kitchen, train personnel, plan menus, oversee product purchasing and manage culinary budget.

Plan and direct food preparation and culinary activities

Modify menus or create new ones that meet quality standards

Manage and control food/labour costs

Supervise kitchen staff’s activities

Arrange for equipment purchases and repairs

Recruit and manage kitchen staff

Rectify arising problems or complaints

Perform administrative duties

Comply with nutrition and sanitation regulations and safety standards

Keep time and payroll records

Maintain a positive and professional approach with coworkers and customers

The Person

  • 5 to 8 years relevant experience in hospitality or Food & Beverage industry
  • Exposure internationally in hospitality industry and experience in opening new hotel would be definite advantage
  • Good banquet experience
  • Experience with Japanese cuisine and speaking Japanese would be an advantage
  • Strict controls on HACCP procedures
  • Good focus on training and talent development
