Responsibilities
As the Executive Sous Chef, you will play a pivotal role in ensuring the highest standards of culinary excellence. Your key responsibilities will include:
Consistently delivering professional, friendly, and proactive guest service while supporting your colleagues.
Overseeing all kitchen operations in the absence of the Executive Chef.
Collaborating with the Executive Chef to create innovative and high-quality food menus.
Managing daily market lists to ensure quality food ordering while adhering to budgetary constraints.
Coordinating with storekeepers to maintain quality and inventory levels.
Working closely with the Catering department to assist in food coordination for events and client meetings.
Conducting daily shift briefings with Sous Chefs to ensure clear communication and alignment.
Maintaining open lines of communication with Outlet Managers and Sous Chefs to address guest feedback.
Balancing operational, administrative, and team needs effectively.
Ensuring proper staffing and scheduling in line with productivity guidelines.
Adhering to kitchen policies, procedures, and service standards.
Following all safety and sanitation policies when handling food and beverages.
Performing other duties as assigned.
Qualifications
The ideal candidate will be a well-organized and creative professional with excellent communication and interpersonal skills. A passion for perfection and the ability to thrive in a fast-paced environment are essential. Additional qualifications include:
Proven leadership experience in the culinary field.
Journeyman’s papers or international equivalent.
Diploma or certification in a culinary discipline (preferred).
Demonstrated expertise in cost control, including food, equipment, labor, and waste management, to meet quality and financial goals.
Proficiency in Microsoft Windows applications.
Strong problem-solving abilities and a high level of responsibility and reliability.
Ability to perform well under pressure and work cohesively as part of a team.
A guest-focused mindset with the ability to remain calm and courteous at all times.
Day-to-Day
On a typical day, you will:
Lead and inspire the kitchen team to deliver exceptional culinary experiences.
Collaborate with the Executive Chef to design and refine menus.
Oversee food preparation and ensure adherence to quality and safety standards.
Manage inventory, place orders, and monitor costs to align with budgetary goals.
Conduct team briefings and provide guidance to Sous Chefs and kitchen staff.
Interact with guests and clients to ensure their satisfaction with the dining experience.
Address operational challenges and implement solutions to maintain efficiency.
